Fish:
There are two methods to cooking that we use:
-
Add 2-3 tablespoons of olive or other cooking oil to saute
pan
-
Add filets to oil
-
Sprinkle HogWild Spice Blend on filets to taste
-
Turn once after recommended time for the type of filet you
are cooking
-
Sprinkle HogWild Spice Blend on second side
-
Cook to doneness desired, turning as recommended
-
Sprinkle more HogWild on each turning if a stronger flavor
is desired
-
After removing from heat - sprinkle juice from fresh lemon
over filets
OR (as seen at our tasters)
-
Prepare butter mixture as below - add juice of half of a
lemon
-
Coat first side of filets with butter mixture - place in
pan or on griddle
-
Place filets on coated sides!
-
Coat the other side of the filets while the first side is
cooking
-
Baste every minute or so while cooking, turning as
recommended for the style of fish you are cooking - re whisk the butter mixture
to keep spice suspended
-
If you want a stronger flavor - sprinkle a little raw spice
blend onto the fish
-
Cook to desired doneness
-
After removing from heat, serve - no lemon required due to
it being in the mixture - serve with some of the butter sauce drizzled over the
filets for effect
